We have a new install and I am trying to edit the theme. I'd like to start from the "Default" theme, but it does not seem to be on the repository (the old.kete.net.nz theme that is there is fixed width...) is it possible somehow to download and so edit the Default theme?

The default theme is a little bit different than most themes because it is the basis for all other themes. It's code is included in two places in your installation of Kete. You can download the CSS files that make up the them by grabbing these URLs for your site:
